Salted Chocolate Macadamia Nut Butter Recipe

While I’ve been enjoying an assortment of nut butters from Ingr-EAT-ients, I couldn’t help but want to try to make some of my own again.

Ever since I made the macadamia nut butter about a month ago, I’ve been wanting to try a nut butter variation of one of my favorite healthy desserts – Salted Dark Chocolate Macadamia Nut Bark.

Which when I tried making it the other day, along with a plain Macadamia Nut Butter and a Vanilla Honey Cashew Butter (which reminded me of cookie dough), ended up sort of tasting a little like Nutella. Not exactly like Nutella, although I’m sure you could make something even closer using hazelnuts, but enough that it really really REALLY tasted like a treat!

Although I could simply eat the chocolate macadamia nut butter by the spoonful, it was also great on an apple. And I can’t wait to try it in the Yonanas later this week…Just image….Salted Chocolate Macadamia Nut Banana Ice Cream….DROOL….

Anyway, here is the Salted Chocolate Macadamia Nut Butter recipe!

Salted Chocolate Macadamia Nut Butter

Ingredients:
10 oz Unsalted Roasted Macadamia Nuts
About 1/2 cup Dark Chocolate chunks
1 tsp Sea Salt (can use less or more to taste)
1 tsp Coconut Oil

Place nuts in a food processor. Process until a fine powder. Add in chocolate, salt and oil. Continue to process until smooth. This will take only a minute or two.

If you would like it to be chunky, put in a few nuts at the very end and blend for only a second or two.

Macadamia Nut Butter Recipe

When I bought the nut butters from Eddie of Ingr-EAT-ients, we talked about a macadamia nut butter.

I love macadamia nuts. They are super tasty and also low in phytic acid, which makes them the best nuts to consume.

The only downside is that they are generally more expensive – at least in all the places that I’ve lived.

But anyway, since I love macadamia nuts, so does Ryan, and Eddie doesn’t YET offer macadamia nut butter, we decided to make our own.

Sweet and Salty Macadamia Nut Butter

Ingredients:
1lbs Macadamia Nuts
1 tsp Organic Raw Honey (Trader Joe’s)
1 tsp Coconut Oil
1 tsp Salt (a little less than a full tsp…add slowly to taste)

Put macadamia nuts in a food processor. Start to blend. (Save a handful for the end if you want a crunchy nut butter.)

As the nuts blend, they will start to stick to the side. Scrap them down until the nut mixture begins to form a ball.

Add honey, oil and salt. Keep blending until completely smooth and oil, honey and salt are combined.

If you want to have a crunchy butter, add in the handful of macadamia nuts now and process for just a few seconds.

Serve on anything you want or eat by the spoonful…which we may or may not have done….

Friday Fun

Some random fun to celebrate Friday….just because!

Two things I found this week while shopping that I absolutely LOVE:

They have a touch of sugar…which means next to nothing! YAY! A good little “dessert!” P.S. those are not my hands…manicures do not survive with me….

Also, I went rock climbing with the team last week and LOVED IT!

What better way to see all of your training pay off than to feel physically fit enough to take on any challenge!?!

AND Ryan got a trigger point “Grid” for his birthday…which I’ve stolen to use like every day!

And finally…wish me luck.

I’ve started a new training program which I’m pretty sure will end up upping my deadlift AND help me accomplish a few feats on the VersaClimber and battling ropes. The program was designed by one of the owners of Innovative Results and I’m interested to see the results!

Have I mentioned before that I love self-experimentation!?!

Right now, I’m just working my butt off…and I haven’t been so sore consistently in a while. Although I do feel better after my 7 mile run yesterday. (Uhm yep…I ran 7 miles…who would have thunk it…BLEH…haha)
